Some of the dumplings sold here are large enough that a single one is a full meal — vendors stack them shoulder to shoulder in bamboo steamers taller than the counter itself.

Fist-sized dumplings are hand-packed with pork, cabbage, and glass noodles, then steamed in towering bamboo baskets until the wrapper turns thick and pillowy. Alongside dakgangjeong, jumbo mandu is one of the signature foods that draws crowds to Incheon's century-old Sinpo International Market.

Why it's made this way: Sinpo Market grew up around Incheon's port and its mix of Korean, Chinese, and Japanese residents, and its oversized dumpling stalls became one of the market's calling cards as it evolved into a modern street-food destination.
