Its name literally just means 'cutting-board meat' — the pork is steamed, then sliced straight off the wooden board it's served on, no plate involved.

Jeju black pork belly is steamed with perilla leaf, garlic, and doenjang until tender, then laid whole on a wooden cutting board and sliced to order at the table, dipped in a savory sauce. It's traditionally served at village feasts and ancestral rites across the island.

Why it's made this way: Because black pigs were historically scarce and prized on Jeju, dombegogi was once reserved for community banquets and rituals rather than everyday eating, which is why it still carries a celebratory weight beyond an ordinary pork dish.
