Jeonju's version piles on more than a dozen separately seasoned vegetables — far more than the handful found in a typical bowl elsewhere in Korea.

Sticky short-grain rice cooked in beef stock is topped with a wide spread of seasoned vegetables — bean sprouts, bracken fern, mung bean jelly, and more — plus raw beef or a fried egg, all mixed tableside with gochujang. Market stalls and generations-old restaurants around Jeonju's old town serve it as the definitive version of Korea's best-known rice dish.

Why it's made this way: Jeonju's history as a grain-trading hub gave it easy access to a wide range of surrounding farms, producing an unusually varied bibimbap, and the city has promoted the dish as its culinary calling card for decades, building an annual festival around it.
