Some of Damyang's tteokgalbi restaurants trace their roots back generations, to family recipes passed down since the early-to-mid 20th century.
Minced short rib meat is seasoned with sweet soy sauce, hand-shaped into thick patties, and grilled over charcoal until the edges caramelize. Damyang, a small county in South Jeolla, built its food identity around this one dish, sold at grill stalls and restaurants across town.
Why it's made this way: The dish traces back to royal court cooks who minced rib meat for easier eating; one well-known account credits exiled Joseon-era scholar-official Song Hui-gyeong with carrying the technique to South Jeolla, where it took root in Damyang specifically and has been a defining local specialty for generations.
