Damyang is also famous for its bamboo forests, and tteokgalbi restaurants there often serve it with daetongbap, rice steamed inside a bamboo stalk.

Minced short rib meat is seasoned with sweet soy sauce, hand-shaped into thick patties, and grilled over charcoal until the edges caramelize. Damyang, a small county in South Jeolla, built its food identity around this one dish, sold at grill stalls and restaurants across town.

Why it's made this way: The dish is often traced to Joseon royal court cooking, where rib meat was minced so it could be eaten easily, and Damyang made it its defining local specialty.
