Vendors grind the mung beans fresh at stone mills parked right at their stalls — you can watch whole dried beans turn into batter just a few feet from where it hits the griddle.

Soaked mung beans are ground into a thick batter with pork, kimchi, and bean sprouts, then ladled onto a griddle and fried into a thick, craggy pancake, crisp outside and soft within. Gwangjang Market, Korea's oldest surviving traditional market, has entire rows of stalls built around it.

Why it's made this way: Gwangjang Market opened in 1905 as Korea's first permanent market, and bindaetteok became one of its anchor dishes as vendors fried them to order for generations of shoppers looking for a cheap, filling bite between errands.
