The name means 'skeins of yarn': the lamb intestine is wound around itself like wool.

Lamb small intestine wound into a skein around a piece of lamb mesentery (entresijo) and a stalk of green garlic, boiled, then fried until crisp and finished with garlic and parsley, served as a tapa in Zaragoza bars.

Why it's made this way: Madejas are a traditional Aragonese tapa rooted in Zaragoza's bar and vermouth culture, especially in the old-town Tubo; Cuenca's zarajos, wound on a stick, are a cousin.
