The pour from arm's height (escanciado) aerates the still cider; in December 2024 UNESCO listed Asturian cider culture as Intangible Cultural Heritage.

Tart, unfiltered, still apple cider poured a small shot at a time from high above the glass, then drunk in one go at cider houses and festival stalls.

Why it's made this way: The high pour, the escanciado, is the hallmark of Asturian cider, and in 2024 UNESCO recognised the whole culture of making, pouring and sharing it.
