Bienmesabe — street food from Canarias, Spain

Its name literally translates to 'tastes good to me,' a name so plainly enthusiastic it doubles as its own review.

Bienmesabe is a thick, sweet paste of ground almonds, sugar, egg yolks, lemon zest, and cinnamon, often spooned over ice cream or eaten alone with a spoon. Canarian markets and bakeries sell it in small cups or jars.

Why it's made this way: Almond trees grow in Gran Canaria's highlands, especially around Tejeda, a village famous for its bienmesabe and its almond-blossom festival, and the sweet became one of the islands' signature desserts.
