The potatoes are boiled in heavily salted water until it nearly evaporates, which is what wrinkles their skins into a thin, salty crust without ever peeling them.

Papas arrugadas are small potatoes boiled whole in very salty water until the skins pucker and dry, then served with mojo, a garlicky sauce in red (spicy, paprika-based) or green (cilantro or parsley-based) versions. Canarian market stalls and food carts serve them in paper bowls.

Why it's made this way: Small, salt-tolerant potato varieties thrive in the Canary Islands' volcanic soil, and the wrinkled-skin technique became the islands' signature way of serving them.
