It's cooked from plain wheat flour toasted in a pan before any liquid is added, a step that keeps the finished porridge from turning gluey.

Gachas Manchegas simmers toasted flour with water, olive oil, garlic, and paprika into a thick, savory porridge, then tops it with fried pork bits called torreznos or chorizo. Village gatherings across Castilla-La Mancha still cook it in a single communal pan, eaten by scooping straight from the shared dish with bread.

Why it's made this way: It's an old shepherd and farm-laborer dish from La Mancha's plains, cheap enough to feed a whole crew from a single pan of flour and lard.
