It's shaped like an actual bomb on purpose, topped with a stripe of spicy sauce across the top to mark the 'fuse,' a nod to Barceloneta's old dockworker past.

A bomba is a round, breaded ball of mashed potato and minced meat, deep-fried until crisp, then topped with a spicy tomato-based sauce and aioli. Bars in Barcelona's Barceloneta fishing quarter serve it as a defining tapa of the neighborhood.

Why it's made this way: It was created in the working-class Barceloneta district, and its bomb shape and spicy topping are said to nod to the area's politically radical history.
