It's deep-fried like a doughnut but filled like a French pastry, coated in crunchy sugar right after frying so the sugar never has time to melt.

A xuixo is a cylinder of yeasted dough deep-fried until golden, then rolled in granulated sugar and filled with thick vanilla custard. Bakeries around Girona sell them warm, often first thing in the morning.

Why it's made this way: It's closely tied to the city of Girona, where 19th-century pastry chefs are credited with popularizing the fried-and-custard-filled combination that later spread across Catalonia.
