Xuixo

Xuixo — street food from Cataluña, Spain

Its filling is crema catalana, the same egg-and-milk custard that sits under the burnt-sugar crust of Catalonia's best-known dessert.

A xuixo is a cylinder of yeasted dough deep-fried until golden, then rolled in granulated sugar and filled with thick vanilla custard. Bakeries around Girona sell them warm, often first thing in the morning.

Why it's made this way: Girona claims it as its signature pastry, and the city's bakeries still sell it warm each morning even though the xuixo is now found across Catalonia.
