Valencian horchata isn't made from rice or almonds like versions elsewhere — it's pressed from chufa, a small tuber grown almost nowhere else in Europe at this scale.

Horchata is a chilled, milky drink made by soaking and pressing chufa (tiger nuts) with water and sugar, traditionally served alongside fartons, long soft glazed pastries made specifically for dunking. Valencia's street kiosks and market stands sell the pair together.

Why it's made this way: The Alboraya area near Valencia has cultivated chufa for centuries, and horchata became the city's defining cold drink long before ice cream shops sold it too.
