The dough is stretched paper-thin and coiled with lard, not butter, which is exactly what its name comes from — saïm is Mallorcan for pork lard.

Ensaimada is a soft, spiral-coiled sweet roll made from a butter- and lard-enriched yeast dough that's stretched thin, coiled into a snail shape, baked until golden, and finished with a dusting of powdered sugar. Bakeries across Mallorca sell it plain or filled with cabell d'àngel (candied pumpkin) or local sobrasada.

Why it's made this way: The pastry takes its name and signature richness from saïm, the pork lard worked into the dough, a technique documented on Mallorca since at least the 17th century.
