Recipes are often kept as closely guarded family secrets, with some producers steeping upward of a dozen wild herbs so no two bottles from different bars taste quite the same.
Hierbas is a sweet, herbal liqueur made by steeping local plants like fennel, rosemary, and citrus leaves in aniseed spirit, served ice-cold in a small glass after a meal. Ibiza and Formentera bars pour it as the traditional way to close out dinner.
Why it's made this way: Rooted in generations of home infusion using the islands' wild Mediterranean scrubland herbs, the liqueur became so tied to Ibiza's identity that it now carries protected geographic status as Hierbas Ibicencas.
