Sobrasada is a raw-cured pork sausage seasoned heavily with sweet paprika, ground fine enough to stay soft and spreadable, traditionally smeared onto bread or toasted coca. Mallorcan market stalls sell it by weight straight from the casing, often paired with honey.

Why it's made this way: It carries EU protected status as Sobrasada de Mallorca, reflecting a curing tradition on the island that goes back centuries, built around local pigs and the paprika brought back through early trade with the Americas.
