In Madrid, ordering vermouth isn't just picking a drink — 'la hora del vermut' is an actual time slot, the pre-lunch Sunday ritual around 1pm, and many old-school bars still pour it straight from wooden barrels or antique taps behind the counter rather than from a bottle.

Vermut de Madrid is a herb- and spice-infused fortified wine, usually red and slightly bitter-sweet, served on tap or from the barrel over ice with an olive and a slice of orange. It's drunk before a meal, almost always alongside a small plate of tapas.

Why it's made this way: Madrid's grifo (tap) vermouth culture, centered on historic bars like Casa Camacho and La Ardosa, turned what started as an imported Italian aperitif into one of the city's most defining social customs.
