Pamplona's council once allowed the carpenters' guild to serve rellenos as a light breakfast after the Corpus Christi and San Fermín processions.

A pale, bloodless sausage of rice, egg, bacon, parsley and saffron, sliced and fried, often with tomato sauce, and served as a pintxo in Pamplona bars.

Why it's made this way: It is typical of the Pamplona basin and little known elsewhere, and the city's tourist office lists it among Pamplona's typical pintxos.
