It's named after the 1946 Rita Hayworth film 'Gilda' — a San Sebastián regular thought the spicy, salty, green skewer matched the character's fiery reputation, and the name stuck for good.
A gilda skewers a pickled guindilla pepper, an anchovy fillet, and a green olive on a toothpick, no cooking involved. Pintxo bars across San Sebastián line their counters with trays of them for grabbing with a drink.
Why it's made this way: It was reportedly invented at Bar Casa Vallés and is widely credited as the very first pintxo, the dish that kicked off the whole Basque small-bites tradition.
