A royal ordinance of 1695 already regulated it, fixing the flour quality and the pie's measurements.
A hand-sized pie of veal, chorizo, hard-boiled egg and spices in a shortcrust base, capped with a puff-pastry lid of concentric spiral rings, bought warm from bakeries.
Why it's made this way: It is the traditional pie of the Huerta de Murcia, and since 2009 the region has held an annual pastel de carne day in April.
