It's set with no refined sugar at all — just kithul or coconut treacle — then pressed flat and cut into diamonds with a wooden mould some families keep for generations.

Roasted rice flour is simmered with treacle, coconut and cashew nuts into a dense, chewy fudge, pressed flat and scored into diamonds. The Dumbara valley near Kandy is particularly associated with this version, sold at market stalls through the hill country especially around festival time.

Why it's made this way: This regional take on an old Sinhalese village sweet takes its name from the Dumbara hills around Kandy, distinguishing it from the plainer cashew-slice aluwa found elsewhere on the island.
