The diamond shapes are cut with a wooden mould, and many families still sweeten it with kithul palm treacle rather than refined sugar.

Roasted rice flour is simmered with treacle, cardamom and cashew nuts into a dense, chewy fudge, pressed flat and cut into diamonds. It's sold at sweet shops and market stalls across the island, especially around the Sinhala and Tamil New Year in April.

Why it's made this way: Aluwa is one of the classic Sinhalese New Year sweets, made in village kitchens across the island alongside kokis, kavum and mung kavum.
