Breudher

Breudher — street food from Negombo & the West Coast, Sri Lanka

It's baked in a fluted ring mould and traditionally eaten with butter and slices of Edam cheese, a very Dutch pairing that's stuck around Negombo's bakeries for generations.

A rich, buttery yeasted dough studded with raisins and nutmeg is baked in a ridged mould into a cross between bread and cake, sliced and served with butter. Negombo bakeries sell it through the Christmas and New Year season.

Why it's made this way: It survives from Dutch colonial baking traditions kept alive by Negombo's Burgher community, whose many Catholic churches earned the town its nickname 'Little Rome.'
