Thousands of revelers eat it at 4am, standing in the street, minutes after Basel's Fasnacht carnival kicks off in total darkness with the Morgestraich procession.
Flour is slowly browned in butter until deeply toasted, then whisked into beef stock with onion and sometimes a splash of red wine, finished with grated cheese. Street stalls and pubs around Basel's old town ladle it out hot through the night that Fasnacht begins.
