Ground hazelnuts largely replace the flour — the result is denser, richer, and less bread-like than typical gingerbread.

Ground hazelnuts are mixed with honey, egg, and warm spices into a dense dough, shaped into rounds or hearts, and baked until firm, sometimes finished with a chocolate glaze. Bern's Christmas markets sell them individually wrapped, often stamped or iced with festive designs.

Why it's made this way: It draws on the Bernese Oberland's Alpine hazelnut and honey supply, turning a simple pantry combination into the region's answer to gingerbread.
