Ground hazelnuts largely replace the flour — the result is denser, richer, and less bread-like than typical gingerbread.

Ground hazelnuts are mixed with sugar, egg white, candied peel and warm spices into a dense dough, rolled flat, cut into squares or rectangles, and baked until firm. Bern's Christmas markets sell them individually, often iced with the city's bear emblem.

Why it's made this way: It's a Bernese specialty, often decorated with the city's bear, and the region's answer to gingerbread.
