The classic serving isn't dainty — two whole meringue shells are piled with a mountain of thick double cream, in a portion size meant to refuel hikers, not delicately finish a meal.

Egg whites are whipped with sugar and slow-baked until crisp outside and marshmallow-soft inside, then served alongside a generous scoop of unsweetened whipped double cream. Bernese Oberland market stalls, mountain cafés, and lakeside stands near Lake Thun sell them as an afternoon treat.

Why it's made this way: The Meiringen area of the Bernese Oberland claims the dessert as a local invention, and thick double cream from Alpine dairy farms became its inseparable partner.
