The Compagnie de 1602, the society that runs the costumed festival, serves 'soupe de la Mère Royaume' at its own stands, one of them beside grilled cervelas.
A thick soup of carrots, turnips, cabbage, leeks, onions and potatoes is ladled from big pots and served with bread and cheese at stands in Geneva's Old Town during the Escalade weekend in December. There is no fixed recipe, and each stand and family makes its own.
Why it's made this way: The soup honours Catherine Cheynel, known as la Mère Royaume, who in the Escalade legend threw a pot of hot soup from her window onto a Savoyard soldier during the night attack of 1602.
