Traditional loaves were baked just once or twice a year in shared village ovens, then stored for months — the dense rye crumb was specifically suited to staying edible that long.

A firm, dark loaf made almost entirely from rye flour is baked with a thick crust that helps it keep for weeks without going stale. Valais market stalls sell it sliced thick, often alongside Trockenfleisch and mountain cheese.

Why it's made this way: Rye tolerated the Valais's poor mountain soil better than wheat, and the bread's keeping quality mattered when villages baked communally only a few times a year.
