The classic version has no tomato and no wine reduction fuss — just veal, mushroom, cream, and a splash of white wine, kept deliberately plain.
Thin strips of veal, often with mushroom, are quickly seared, then finished in a light cream sauce with a splash of white wine. Zurich's food trucks and market-square stands now sell a takeaway version over a bed of Rösti or fries, portable rather than plated.
Why it's made this way: It grew out of Zurich's guild-hall restaurant tradition, and its recent move into food trucks and takeaway boxes reflects the city's modern street-food scene adopting a classic.
