It's pressed into an intricately carved wooden mold before baking, so every wafer comes out stamped with a picture — a nativity scene, a coat of arms, a Zurich landmark — like edible printmaking.

A thin honey-and-flour dough, without any fat or leavening, is pressed into a carved wooden mold, then baked briefly so it hardens into a crisp, deeply embossed wafer. Zurich's Christmas markets sell them by the piece, more prized as decorative keepsakes than as an everyday snack.

Why it's made this way: The technique reaches back to old European honey-cake molding traditions, and Zurich kept the craft alive as a distinctly local Christmas specialty.
