These fatty lamb offcuts, imported cheaply from New Zealand and Australia, are grilled at small stalls throughout Nuku'alofa and sold hot off the fire.

Lamb or mutton flaps are grilled over open coals at roadside stalls and market corners around Nuku'alofa, then served straight off the fire with root vegetables or rice.

Why it's made this way: Cheap frozen lamb and mutton flaps have been imported into Tonga in bulk since the late 20th century, and grilling them street-side turned an inexpensive cut into one of the most common grab-and-go meals in the capital.
