Bake and Shark

Richard's Bake and Shark, started by a vendor named Richard in the 1980s and later run by his son, is the best-known of the many stalls along the bay.
A flat fried "bake" bread is split and stuffed with battered, deep-fried shark, then piled with a build-your-own bar of tamarind sauce, garlic, pepper, and shredded lettuce at stalls facing Maracas Beach.
Why it's made this way: Maracas Bay, reached via the winding road through the Diego Martin hills, is Trinidad's most popular beach, and its cluster of shark stalls made bake and shark synonymous with the region.
