Debe is nationally known as Trinidad's curry duck capital, with family-run kitchens along the main road drawing customers from across the island specifically for the dish.

Duck pieces are browned and stewed in a thick curry of roasted ground spices, potato, and pepper, ladled over rice or scooped up with roti from small family-run kitchens around Debe.

Why it's made this way: Debe's reputation as a South Trinidad food destination extends beyond its oysters to home-style curry duck, a dish locals specifically drive to the town to eat.
