Manicou, a local opossum, is traditionally stewed only after its scent glands are removed first, a step every wild-meat cook considers non-negotiable.
Game meats such as manicou, agouti, or lappe are heavily seasoned and stewed or curried, then sold in small takeout portions from roadside stalls known for carrying wild meat during open season.
Why it's made this way: Penal-Debe's forested, rural stretches of South Trinidad have long supported hunting, and its roadside stalls are among the few in the country still associated with selling wild game.
