Corn Soup

Corn soup is also the traditional late-night food of Carnival, sold outside fetes and along the road to revellers in the early hours.
Chunks of corn on the cob and split peas are simmered in a thick broth, often with coconut milk, dumplings, pumpkin and ground provisions, ladled into cups by vendors circling the Savannah, especially after dark.
Why it's made this way: The Savannah's ring of food carts is Port of Spain's most famous open-air street food gathering, and corn soup is the dish locals most associate with a night out there.
