The dish is deliberately made a day ahead and served ice-cold, since the lime juice and cucumber marinade needs hours to properly "cook" the boiled meat through acidity alone.

Boiled pig's feet or chicken are chopped and steeped in a sharp marinade of lime juice, cucumber, hot pepper, and salt, served cold in cups as the classic finish to a beach lime.

Why it's made this way: Mayaro's long Atlantic beach is one of Trinidad's premier weekend lime destinations, and vendors selling ice-cold souse to sunburnt beachgoers are a fixture of its shoreline.
