Toco Fried Kingfish

Toco sits at the island's northeastern tip where the Caribbean Sea meets the Atlantic, and its exposed, harbor-less coastline has long forced fishermen to land their boats straight onto the beach.

Whole kingfish or carite are cleaned, seasoned with a garlic-and-herb green seasoning, and fried whole, sold hot wrapped in paper by vendors clustered near Toco's fishing depot at the island's northeastern tip.

Why it's made this way: Toco, on Sangre Grande's Atlantic-facing tip, has one of Trinidad's oldest fishing communities, and its roadside fish fry is a required stop on the drive around the island's north coast.
