The bread itself is part of the registered recipe: it is made with chickpea yeast and sourdough.

A pressed toast of chickpea-yeast bread loaded with sucuk, sausage, kaşar or tulum cheese and tomato, often with pickles and sauces, grilled flat and eaten hot from toast counters.

Why it's made this way: It comes from Ayvalık on the northern Aegean coast, where it is the town's best-known food, and was registered as a traditional product name in January 2023.
