Laz Böreği

Despite the name meaning "Laz-style börek" — börek usually being a savory pastry — Laz böreği is entirely sweet, filled with custard rather than cheese or meat.

Thin sheets of dough are layered with a light milk custard, rolled into a spiral or stacked into a tray, and baked until the top turns golden and the inside stays soft and creamy. Trabzon and Rize's pastry shops sell it in wide trays, cut into squares.

Why it's made this way: Named for the Laz people native to Turkey's northeastern Black Sea coast, this dessert reflects the region's dairy-rich mountain farming and its habit of adapting the savory börek pastry format into something sweet.
