The classic filling is just flour toasted in butter, and kete was once carried by travellers and shepherds because it keeps so well.

A rich, buttery pastry filled with butter-roasted flour, walnuts or cheese, baked in the oven and sold from Erzurum's bakeries to eat with tea.

Why it's made this way: Kete is a breakfast staple of Erzurum and Eastern Anatolia, and Erzurum Ketesi was registered as a geographical indication in 2023.
