They reach harvest size in under a year — much faster than most farmed oysters — thanks to the warm, nutrient-rich currents running along Fujairah's Gulf of Oman coast.

Dibba Bay oysters are farmed in the clean, warm waters off Fujairah's northern coast, the first gourmet oyster operation in the Middle East. They're served raw on the half shell at seafood shacks and restaurants up and down the East Coast, often within hours of harvest.

Why it's made this way: Fujairah's Gulf of Oman coastline, unlike the shallower Arabian Gulf side of the country, gets consistent open-ocean currents that made it possible to farm oysters commercially here for the first time in the region.
