Hammour is a grouper that changes sex from female to male as it matures and can take years to reach full size — part of why sustainably caught, East Coast–landed hammour has become a selling point on menus.
Whole hammour (grouper) is scored, rubbed with garlic, chili, and turmeric, and grilled over charcoal until the skin blisters, then served with rice or bread and lemon. Fujairah's fishing harbors and beachside grills serve it the same day boats bring the catch in.
Why it's made this way: Hammour has been the most prized fish on the UAE's coasts for generations, and Fujairah's small-boat fishing fleet keeps a fresh-off-the-boat version of the dish alive in a way Dubai's larger, import-heavy seafood market can't quite match.
