Machboos Samak

It uses the same dried-lime-and-saffron stock as meat machboos, but the fish goes in only at the very end — simmered for minutes, not hours, so it doesn't fall apart into the rice.

Machboos samak layers spiced basmati rice with a whole or filleted fish — usually hammour or safi — cooked in a stock of dried lime, saffron, and cardamom. Along the Fujairah coast it's a standard Friday family lunch, built around whatever the morning's catch brought in.

Why it's made this way: Coastal Emirati families along the East Coast have long swapped fish for meat in machboos on fishing days, keeping the dish tied to the rhythm of the local catch rather than a fixed recipe.
