In Lviv's Rynok Square, it's common to be served by vendors in embroidered folk dress ladling dumplings straight from a giant pot into paper bowls for tourists walking by.
Dough pockets are hand-filled with sour cherries, farmer's cheese, or potato and fried onion, then boiled and finished with a knob of butter or sour cream. Market stalls and takeaway windows around Lviv's old town sell them by the bowlful.
Why it's made this way: Western Ukraine's Galician cooking leans on dairy, orchard fruit, and potatoes, and varenyky became the region's flexible everyday vessel for all three.
