Smazheni Bychky

Locals eat these tiny Black Sea fish bones and all, the same way you'd eat a handful of fries.

Small Black Sea gobies (bychky) are dredged in flour and shallow-fried whole until crisp, then often finished in a garlicky tomato sauce. Privoz market vendors and beachside stands sell them fresh, hot, and cheap.

Why it's made this way: The Black Sea's shallow, warm waters make gobies one of the easiest local catches, and Odesa's market culture turned them into a defining cheap street snack.
