Shabo's vineyards were planted by Swiss settlers who sailed from Lake Geneva to the Black Sea in 1822 after the Russian tsar promised them land — their wine cellars still stand near Odesa two centuries later.
Shabo wines are produced on the sandy, sun-drenched shore of the Dniester estuary near Odesa, where Swiss colonists once built one of the Black Sea's most refined winemaking traditions. The wines range from crisp coastal whites to fuller reds, grown on some of the oldest continuously cultivated vineyard land in Ukraine.
Why it's made this way: The Shabo settlement, just outside Odesa, was founded specifically as a winemaking colony, giving the Odesa coast a wine identity unlike anywhere else in Ukraine, rooted in 19th-century Swiss expertise rather than Slavic tradition.
