Unlike the pinched dumplings found elsewhere in Ukraine, Poltava's version is often just torn by hand straight into the simmering pot — no rolling pin, no cutter, just fingers.

Simple flour-and-egg dough is torn into small pieces and simmered in a rich broth with pork or chicken, onion, and dill. It's ladled hot from cauldrons at market kitchens and village fairs across the Poltava region.
